Octopus & pork w/ fregola & pecorino foam

Seared scallop w/ liquorice gel, carrot puree, pickled fennel

Course 2

Suckling belly of lamb w/harissa emulsion, cucumber chutney pickled white cabbage & flat bread

Course 3

Chicken w/ TGM crumb & chicken roulade BBQ corn, hen of the woods & black garlic emulsion

Course 4

Flat iron steak w/ Jerusalem artichoke, lovage emulsion, BBQ wild mushroom, courgette & burnt leek

 

Lemon & gin sorbet palate cleanse

Course 5 Dessert

Dark chocolate lava cake w/sweet berry compote, honeycomb & raspberry sorbet
